Recipes and Inspiration!

What do you do with all the goodies you've brought home from The Farm? Try some of these delicious recipes that we use ourselves! Some of these will be family recipes from Katharine's mom and grandmother from whom she has collected litterally dozens of recipes from or from the "Other side of the Pond" from Robert's mum and dad who also both love to cook!

The PERFECT hard-boiled Farm-Fresh Egg

(No more yucky grey inside ring!)

Place Farm-Fresh eggs into deep pot, add enough COLD water to cover eggs by one-two inches. Turn burner on high, BRING to a boil, turn OFF burner and cover pot with lid, leaving pot to remain on burner. Allow eggs to remain in pot for twenty minutes more. Immediately plunge into a deep bowl of ice water and leave for twenty more minutes. Remove eggs, dry shells, peel and enjoy a perfectly cooked, Farm-Fresh egg.

A Delicious Farm-Fresh Egg Fritatta

Serves:  4
Prep Time: 15-20 minutes    Cook time: 15-20 minutes

10 Farm-Fresh Eggs
1 Large Sweet Onion (Diced and Carmelized)
5-6 Slices Smoked Ham (Diced)
Parmesean Cheese (Spinkle Variety is Fine)
1/2 Cup Italian Seasoned Breadcrumbs
1 cup Swiss Cheese (chunked, sliced or shredded)
2 tbs Extra Virgin Olive Oil
Salt and Pepper to taste

Start with freshly carmelized diced onions in a hot (oven proof) skillet. Pre-heat broiler. Lightly whip eggs, add pepper (hold salt to the end as it toughens the eggs) and gently fold in the onions and add diced ham to bowl. Allow mixture to set for 3-5 minutes to give time for flavors to blend thru egg mixture. Add mixture to hot skillet and allow to cook half way thru on med/high heat for approximately 7-10 minutes. Top with Swiss cheese, add Parmesean cheese to top and add breadcrumbs sprinkled over top of mixture and place under broiler for an additional 7-10 minutes until golden brown and bubbly.
Serve with a tossed salad and a glass of white wine. Magnifico!
Change ingredients such as ham and cheeses to make your own combinations! Try cheddar or Bleu cheese instead of Swiss. For a vegetable try with diced or thinly sliced tomatoes, artichokes, bell peppers, broccol flourettes, spinach, baby peas. For a different taste also try fresh parsley, rosemary or roasted garlic.
 
              Honey and Garlic Pork Chops Over Rice (NO EGGS required, it's just SOO good, we wanted to share!)
1- Chicken Boullion cube dissolved in one cup hot water
6-8 Cloves of garlic, peeled and minced very fine
6-8 Tbsp Lemon juice
3 Tbsp Soy sauce (Low salt is recommended)
4 1/2 Tbsp Honey (any brand)
5-6 Pork chops (boneless) 1/2 inch thick or more
2 Cups hot white rice (Follow directions on pkg to cook, once meat has marinated)
1 Large Glass Pan (casserole dish about 2 inches deep)
 
Combine first 5 ingredients in large casserole pan stir lightly to blend. Add pork chops to marinade mixture and allow to set for at least 1 hour. Cover with tinfoil tightly and bake in a  400 degree oven until done approximately 40 minutes, depending on chop thickness. Serve over hot rice with remaining juice from pan.
